Chef Staffan Terje of Perbacco Ristorante in San Francisco take you through his five-course menu for a summer festa. You’ll treat your guests with crostini as they arrive, and prepare their palate with a marinated peach and burrata antipasto to begin. Next, hand-rolled trofie pasta with hand-ground pesto. For the main course, Tuscan-roasted pork loin with cipollini, grapes, grape leaves, and fried polenta. To finish: meringue topped with mascarpone, fresh berries marinated in Lambrusco and zabaione.
